Moringa Pasta

Ingredients

  • Main Ingredients
    • 150 g pasta (penne or fusilli)
    • 1 tsp 78E Moringa Powder
    • 1 tbsp olive oil
    • 1 small onion, finely chopped
    • 2 cloves garlic (or dehydrated garlic granules)
    • ½ tsp black pepper
    • ¼ tsp chilli flakes (optional)
    • ½ tsp oregano (optional)
    • Salt to taste
    • 2 tbsp reserved pasta water
    • Grated cheese (optional)

Preparation

  1. Cook the pasta:
    • Boil pasta in salted water until al dente. Reserve ¼ cup pasta water. Drain.
  2. Prepare the moringa base:
    • In a pan, heat olive oil. Sauté onion until translucent. Add garlic and sauté briefly.
  3. Add moringa:
    • Lower heat. Add moringa powder, pepper, chilli flakes, salt, and pasta water. Stir well to avoid lumps.
    • Add corn starch slurry, cheese or butter to thicken the pasta sauce.
  4. Combine:
    • Add cooked pasta and toss until evenly coated.
    • Sprinkle grated cheese and serve

Tip

  • Do not cook moringa powder on high heat—it turns bitter and loses aroma.

Serve with

  • Light salad
  • Garlic bread
  • Lemon wedges on the side
