- 150 g pasta (penne or fusilli)
- 1 tsp 78E Moringa Powder
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic (or dehydrated garlic granules)
- ½ tsp black pepper
- ¼ tsp chilli flakes (optional)
- ½ tsp oregano (optional)
- Salt to taste
- 2 tbsp reserved pasta water
- Grated cheese (optional)
Preparation
- Cook the pasta:
- Boil pasta in salted water until al dente. Reserve ¼ cup pasta water. Drain.
- Prepare the moringa base:
- In a pan, heat olive oil. Sauté onion until translucent. Add garlic and sauté briefly.
- Add moringa:
- Lower heat. Add moringa powder, pepper, chilli flakes, salt, and pasta water. Stir well to avoid lumps.
- Add corn starch slurry, cheese or butter to thicken the pasta sauce.
- Combine:
- Add cooked pasta and toss until evenly coated.
- Sprinkle grated cheese and serve
Tip
- Do not cook moringa powder on high heat—it turns bitter and loses aroma.
