- ½ tsp 78E Spinach Powder (for body and colour)
- 1 green chilli (adjust to taste)
- 1 small clove garlic (optional)
- 1 tsp lemon juice
- Salt to taste
- 2–3 tbsp water (adjust as needed)
Preparation
- Rehydrate powders:
- In a small bowl, mix coriander powder and spinach powder with water to form a thick paste.
- Grind:
- Transfer to a blender or mortar. Add green chilli, garlic (if using), lemon juice, and salt.
- Blend:
- Grind to a smooth chutney. Adjust water for consistency.
- Rest briefly:
- Let the chutney rest for 2 minutes to allow flavours to settle.
Tip
- Spinach powder replaces the need for coconut or soaked gram—adding body without heaviness.
- Can be refrigerated for up to 12 hours in an airtight container
